This delicious sweet potato bowl is a great option for a healthy breakfast. It is loaded with protein to start your day, and topping it with blueberries gives you that added sweetness, with a low sugar fruit. We used our almonds for the almond butter and almond milk, and topped it with our Howe walnuts.
1 large sweet potato - cooked
2 TBSP almond milk - check out our almond milk blog for homemade recipe
3-4 TBSP almond butter
*full fat coconut milk
1. In a food processor blend your cooked sweet potato, almond butter, and almond milk until smooth.
-you can use our almonds to make both your almond butter (just blend in processor for 20 minutes) and your almond milk (recipe on blog)
2. Put the mix in a bowl and top with blueberries, Howe walnuts, cinnamon, and full fat coconut milk, or additional almond milk.
